Nice and Easy for Friday, this is your last recipe of the week from our featured Foodie, Carmen Niehaus (Food Editor for You & Huisgenoot) Tritonia Muffins: These wonderful bran muffins were served to me at the Tritonia coffee shop in Riversdale. Makes 12 muffins 750 ml (3 c) bran 250 ml (1 c) boiling water 180–250 ml (3⁄4–1 c) sugar 110 g butter 250 ml (1 c) cake flour 375 ml (11⁄2 c) wholewheat flour 2 ml (1⁄2 t) salt 12 ml (21⁄2 t) bicarbonate of soda 60 ml (1⁄4 c) buttermilk 2 extra-large eggs, beaten Preheat the oven to 180 °C. Grease a muffin pan with 12 hollows. 1. Mix the bran, boiling water, sugar and butter together. Set aside to cool. 2. Mix the cake flour, wholewheat flour and salt. Add to the bran mixture. 3. Dissolve the bicarbonate of soda in the buttermilk, add the eggs and stir into the bran mixture. 4. Spoon the batter into the prepared pan and bake for 15–20 minutes until cooked.

Here is Thursday's lunchbox recipe courtesy of Carmen Niehaus (Food Editor for You and Huisgenoot Magazine). Chicken Wrap: This makes a delicious light meal and can even be packed in as padkos. Children love this dish. Serves 6 CHICKEN 4 skinless chicken breast fillets salt and freshly ground black pepper 30 ml (2 T) wholegrain mustard mixed with a little plain yoghurt SALAD DRESSING 30 ml (2 T) apple cider vinegar 30 ml (2 T) olive oil 5–10 ml (1–2 t) wholegrain mustard juice and grated rind of 2 oranges 3 ml (rounded 1⁄2 t) sugar SALAD mizuna or cos lettuce 1⁄2 red cabbage, shredded 30 ml (2 T) chopped pecan nuts 1⁄2 avocado, thinly sliced a handful of onion sprouts 6 tortillas MUSTARD MAYONNAISE 80 ml (1⁄3 c) mayonnaise 60 ml (1⁄4 c) plain yoghurt 5–10 ml (1–2 t) wholegrain mustard CHICKEN 1. Beat the chicken fillets lightly until slightly thinner, using the palm of your hand. Season with salt and pepper and spread the mustard-yoghurt mixture over both sides. 2. Place in a steamer and steam for about 10 minutes until just cooked. SALAD DRESSING 3. Mix all the ingredients together. Pour over the chicken while it is still hot. Set aside to cool. SALAD 4. Mix the salad ingredients together and add to the chicken. Divide the mixture between the tortillas. MUSTARD MAYONNAISE 5. Mix all the ingredients together. Spoon over the chicken salad and roll up the tortillas.
