Tel: (65) 68372938 OPENING HOURS: Sunday: 12pm to 1am Monday - Thursday: 3pm to 1am Friday, Saturday & Eve of PH: 12pm to 2am It's all about Tapas this week and we checked out Octapas at Clarke Quay. It's been around nearly 3 years now (in August) and they serve up a myriad of hot & cold tapas, traditional chilled Sangrias, Paellas & more. Located at Clarke Quay just by the riverside, it has an indoor & alfresco area with live music. Opened till late, it's a great place to just kick back & relax or pop down when you feel a bit peckish. So here are my top picks! VALENCIANA PAELLA ($40 for 2/$60 for 4) - One of 4 paellas available and this is their signature version from Valencia. You've got chorizo, pork, chicken, mussels, squids, shrimps & fish. This colourful paella didn't just look pretty, it tasted so good too! Arrived soft, wet & gooey but after awhile when left to stand, the rice had the right consistency. Lots of spices have been used so it was bursting with flavour. The fish was soft & tasty, mussels & squid were fresh, the chorizos not overly salty and there's even a hard-boiled egg! The portion's pretty big so if you're going to be ordering more than just this dish, the portion for 4 can easily feed 6 or even 8 people. Piquillos Relllonos de Bacalao Gratinados ($17.50) - Stuffed Cod Piquillo Peppers. These pretty Spanish peppers were cooked until nice & mushy and they have a wonderful natural sweetness to them & aren't spicy! Inside, you have a creamy Cod mixture that's made of minced cod with milk, flour & smoked onion. It's served with a really delicious tomato cream sauce. Such a flavourful happy dish, you'll be going back for more. Lubina en Salsa Verde ($17.50) - Seabass in Salsa Verde. My favourite dish! It doesn't look like much when it arrives but when you put it into your mouth, it's POW WOW!! The seabass is so soft it melts in your mouth. The salsa verde isn't spicy, very flavourful without overwhelming the fish. A light delicate tapas that even the health fanatics will approve of. Served with mussels. Berenjena Tostada ($9.50) - This is the Spanish version of a brushcetta and one of 6 available. This Vegetarian one has aubergine, peppers, onions & grated parmesan cheese. The bread is fluffy and the outside is toasted nice & crispy & the veggies well marinated. You get a bit of sweet yet salty and yet a wee bit of sour. "Secreto" Cerdo Iberico ($17) - Grilled "Secreto" Iberico Pork, Porto Wine Sauce & Bacon Pie. The Iberico pork was really soft and tender and very tasty. It has a nice bit of marbeling in the meat to give it that juiciness. The Porto wine sauce is like a heartier brown sauce that goes really well with the pork without overwhelming it. Only thing is the Bacon Pie is on the salty side so if you love bacon & potato or like your dishes "giam", your eyes will be rolling skyward in bliss. If not, have a bit of the pie but concentrate on the yummy soft pork! Champinones al Ajillo ($12) - Sauteed mushrooms in sherry & garlic. Thick cut mushrooms that are really juicy with lots of garlic and chopped herbs. Yummy!

Fotos de la biografíaToday's QUICKIE - AN OLD STAR WARS SET IS INHABITED! In the Star Wars film, “The Phantom Menace,” Anakin Skywalker and his mother come from a desert settlement called Mos Eisley. The movie features shots of domed sand structures making up the village. The footage was shot in Tunisia, and the structures were actually built, they weren't miniatures or special effects. It turns out that people have actually moved into these structures and are living there. In video footage you can see people’s things piled inside the sand houses and even pets roaming around. In one, a desert fox can be seen in a cage. In another, a seemingly domesticated bird of prey watches over a pile of clothes. No actual residents appear in the video footage, but the settlement does appear inhabited. Wonder if they’re Star Wars fans? Here's the video link...

Written when her daughter was 17 till she turned 21, these letters, while celebrating that unique relationship between a mother and a growing up daughter, provides valuable insights into life, which mothers sometimes wished they knew how to put across and daughters wish their own mothers had talked to them about. …My view is that a person’s emotional and mental make-up is really quite fragile. For example, traumatic experiences can permanently scar a person. Some people never completely recover from depression and other psychiatric problems brought on by terrible things that happen to them. There is no way to know who would be so badly affected. By then, it may be too late. There seems to be in these people a thin line between normalcy and mental and emotional breakdown. What we read, see and hear form our experiences and can have a profound impact on our lives. The bad things we persist in experiencing can darken our thoughts, change the way we think about ourselves and the world and influence our behaviour. The more we are exposed to evil, the less we get repulsed. After some time, it doesn’t bother us as much. Then comes the point when evil becomes acceptable and its hard to know the difference between good and evil. So don’t seek out experiences that can possibly have a negative effect on you because you can never tell how badly you may be affected…there is plenty of thrills in the pursuit of goodness and truth and things beautiful and wholesome. That is where the adventure in living starts. I would like you to learn to be discerning. Exercise your free will and choose good. I have found it helpful when I am in a spot to remember this verse, (from Phillippians) Whatever is true, whatever is noble, whatever is right, Whatever is pure, whatever is lovely, whatever is admirable. Excerpt, Part 4 of 6, on @[396662803727649:274:Class 95's Love Songs with Marilyn Lee]. Dear Ming, I have advised you to have lots of friends and to get to know many boys before you settle for one. Yet I don’t want you to give your boyfriends the wrong signals. I’m bringing this up now because of a particular guy you see more than the others. Please remember that people and their feelings must be taken seriously. In real life, men and women can be hurt very deeply and broken relationships can permanently scar a life. It is difficult for a boy and girl to have a close and long-standing relationship and keep it platonic. Friendship with a boy can change into courtship. It is at this stage that trust is expected or assumed. It is at this stage too that hurt is greatest should one person break the relationship. So before you get into a serious relationship I want you to be aware that people interpret behaviour to mean different things. A girl from a sheltered and traditional background may interpret a boy’s good manners, such as opening car doors and giving her lifts at nights after attending functions, as being ‘interested’ in her. To him it may just be common courtesy. Do not just slide into a relationship. At an early point in a close friendship, ask yourself, “What am I doing with this?” Ask him too, what he has in mind. Make a mutual agreement regarding the type of friendship you would both like to have. Review the relationship after some time. If you are not ready to commit to having an exclusive relationship, say so. Since you are still young and studying, and uncertain of definite plans for the next few years, don’t make promises for the future over which you have no control. I have no intention to match-make you. So don’t let anymore else pressurize you to commit if deep down you don’t want to. A man I know finally relented and agreed to marry his long-time girlfriend because she threatened to kill herself. The marriage broke up within a year. Similarly, never do anything to jeopardize your right to make a decision. If you realize you have made a mistake and the relationship is not going the way it should, decide and get out. It wont hurt so badly now as it would later on. Always keep your friendships honest and frank with no hidden agendas. Never toy with other people’s feelings or manipulate them. 95's Love Songs with Marilyn LeeGetting physical, Part 3 of 6, excerpts from “My Daughter, My Friend: Letters to a Daughter,” on Class 95's Love Songs with Marilyn Lee. Dear Ming, Can a girl and boy be just good friends and without getting physical? I say yes, if saving sex for marriage is what you want and you are determined to do just that. And if you know how to say, “no.” Some girls say that they will say “no” when the situation occurs. Others say, “it depends.” You really ought to know what the body’s response is like during sexual activity, to understand how to say “no.” You see, sex is a physiological process. Put simply, it starts with superficial skin contact as in touching and more touching. The nerve endings are stimulated and the heart rate increases. The mind, on the other hand, gets more and more blurred. And, as it were, a powerful magnet brings the two bodies together. Good sense is lowest when bodily sensations are strongest. It is very difficult to stop in midstream and back off. That is the reason why the couple should not even allow a situation, where they both find it hard to control, to even arise. To prevent such a situation, you should plan the frequency of your dates so they don’t dominate your life. Do specific things during your time out together. Go shopping, play a game, watch a movie, or a concert, have a meal and talk or study together. Avoid long stretches of time with nothing to do. Here’s a little secret you should know about relationships with the opposite sex. It is really the woman who calls the shots in a relationship. There is nonverbal communication between men and women. Without realizing it, a woman is sending messages to the men she meets by how she behaves, the way she dresses and the places she frequents. You see men usually expect us to set the rules on how we want to be treated. On dates, you can send your “No” signal out by not allowing things to get physical. Redirect your date’s hands should they stray, because when touching begins, the talking stops. Then you will never get to know much about him, his intellect, his viewpoints and attitudes. One thing you will definitely know is how lustful he is. You will also want to ask yourself if he is interested in you as a person or is it your body he’s after. In his mind he will probably think that if you didn’t want it, you would have stopped him. It follows then that it must be agreeable to you. Now do you see that from a man’s point of view the responsibility rests on the woman? It is ironic that some men, while they desire a girl to give in quickly to their sexual demands, may not consider her to be suitable as a wife. They are likely to suspect that she is available to other men as she is to them. When you have a long-standing, close friendship with a boyfriend, having sex or not having sex is something which should be talked about. Ask him his views about having sex and tell him yours. State that it is your wish (and your mother’s) to keep sex till marriage, and that you want him to respect it. Make it an agreement with him. If he does not hold the same viewpoint, and does not want to respect yours, you will want to seriously reconsider him as a “special”. Once you get the issue of premarital sex out in the open and know where you both stand/or that his views are aligned with yours, then you can really start to enjoy a deep and lasting friendship where there is mutual respect, sharing of concerns, hopes and fears and interests, and getting to know and accept each other. Located in the Flower Dome at Gardens by the Bay, it's opened by Michelin star Chef Jason Atherton of Pollen Street Social in the UK and serves up mainly Mediterranean inspired modern European cuisine. Despite the fact that Chef Jason Atherton is not stationed here, the quality of the food is maintained at a very high standard because of POLLEN's talented culinary team which includes Executive Chef Colin Buchan (from Marco Pierre White's L'Escargot and Gordon Ramsay's York and Albany) and Executive Pastry Chef Andres Lara (formerly from Iggy's in Singapore, Noma in Denmark and elBulli in Spain). Impressed yet? You begin your epicurean journey to Pollen with their personalised buggy service from the arrival plaza to the restaurant. This is exclusively for Pollen's guests and the service runs every five minutes during lunch and dinner hours. At the restaurant, you'll be surrounded by temperate olive trees, herbs and vegetation, complete with a sub 20 degree temperature. You also get free access to The Flower Dome so you might want to head down a bit earlier to explore the place. This is casual fine dining which means food & service at its best without the stuffiness that you get at some fine dining establishments. So what MUST you try? Oooo... *rubs hands in glee*.... STARTERS 1) "English Breakfast" ($29) - This is POLLEN's version of an English breakfast. After all, Chef Atherton is English! What you get is a delicious mushroom puree & zesty tomato fondue at the bottom, an egg that has been slow cooked at precisely 60 degrees Celsius for 1hr 12 minutes, topped with juicy mushrooms & crispy Iberico bacon slices & croutons! Yes, it tastes as good as it sounds. The egg was so beautifully cooked, it hurt to cut into it. The flavours & textures just worked so well together. You've got the creaminess of the egg with the crispiness of the Iberico bacon slices & croutons and the slightly sponginess of the mushrooms. An English breakfast has never tasted so refined! 2) Crab Gazpacho ($39) - If you're looking for a light starter, this is it. Fresh white crab meat & pressed crunchy cucumber with chilled Mediterranean tomato & red pepper soup. It's a burst of freshness & delicate play of sour & sweet. Really opens up your palate. 3) Trio of Lobster: Scottish lobster, chilled lobster, fennel cream, sea urchin ($55) - A heavier starter but oh so delish! There's 3 parts to this.... 3A) The first is a ballotine of lobster (Scottish Lobster) which is basically poached lobster that has been left to cool, then sliced and rolled and served with a fennel & lobster cream that tastes like a light but really intense lobster bisque & topped with some sea urchin. 3B) Lobster Roll - Mini lobster burgers really. The bread was soft & buttery & nicely browned on the outside. Inside, chunks of lobster claws mixed in a creamy sauce of lemon mayonnaise, chives & tarragon. I could eat 10 of these little morsels of delight! 3C) Lobster Consommé - Really intense lobster soup. The shell of the lobster has been roasted & cooked in stock with onions, garlic, celery & leeks then burnt with pernod & cognac for that bit of kick. Just one word - WOW! MAINS 4) Challandais Duck Breast ($70) - If I had to narrow the mains down to one, this would be it. If you think duck is always slightly chewy or has that grainy texture, you've got to try this one. It has a slightly smoked flavour, cooked beautifully pink on the inside which isn't easy to do and is so soft and juicy, and melts in your mouth. Its served with broccolini and quinoa which is kind of like couscous and its graininess adds another layer of texture to the dish. It's drizzled with a slightly salty duck jus which goes fabulously well with the sweetness of the apricot & caramel puree. This is a duck like no other, you'll be quacking all the way home. 5) SQUAB PIGEON ($69) - Pigeon isn't something you find often in Singapore so for the adventurous, try this and you'll be rewarded with a party in your mouth. Pigeon is notoriously difficult to cook but POLLEN has done the bird justice. It's perfectly cooked, pink on the inside & the meat is soft & juicy. There is a slight gaminess that is to be expected but its balanced out by the slightly sour roasted rhubarb puree & sweetness of the raisins. DESSERTS Save room in your tum tum and if possible, try ALL the desserts because they are all THAT good and not something you'll find easily elsewhere. All their desserts are a bit salty because Chef Lara believes it provides a better transition from the mains. I'd have to agree! 6) THAI PEANUT ($20) - My favourite and one of POLLEN's signatures. What you get is compressed celery (which is celery mixed with sugar syrup & put into a bag & vacuum sealed so that the sweetness goes into the celery better) together with a peanut paste that has been put into liquid nitrogen at -100degrees Celsius so it comes out like frozen strings. This is paired with a sweet apple yuzu puree, peanut parfait, really fragrant frozen cream infused with galangal & Thai basil, plus a slightly sourish apple sorbet & crunchy peanut feuilletine. It's refreshing yet savoury at the same time. 7) POLLEN TATIN ($20) - This is a deconstructed apple tart. You have verjus (a type of alcohol) with light & airy crème fraiche, whipped caramel, a crunchy little puff pastry, apple slices that have been compressed in caramel water to give it that burnt bitter sweet taste, apple ice-cream & topped with a caramel jelly with a hint of vanilla bean. 8) BANANA RICE PUDDING ($20) - Another interesting dessert inspired by banana curry! The pudding is decorated with yuzu puree, fresh bananas with a bit of sudachi juice (type of Japanese lime) & Madras curry ice-cream. Yup, you heard me right. The ice cream is soft and creamy and has a faint taste of curry. To top it off, many drops of coconut puree have been put into liquid nitrogen forming little white balls which surround the dessert! 9) GINGER ALE ($20) - A really refreshing light dessert! You have a creamy basil milk mousse topped with fresh pineapple that has been mixed with vanilla olive oil, basil granita & home-made ginger ale that has been put into liquid nitrogen & shattered plus more ginger ale poured over it! Yums...and I'm not even a fan of ginger ale! If you go just for desserts, I'd recommend you sit at the Dessert Bar. First, you get to watch the chefs prepare the desserts in front of you which is really interesting. Plus you'll be offered a pre-dessert dessert & a home-made magnum ice-cream to finish off your sweet trip. POLLEN also has a delicious 3 course + coffee or tea set lunch at $55++. I would tell her that sex is beautiful and a very good thing; and from personal experience, it is the ultimate expression of love between a husband and his wife, in this the closest of all human relationships. But for many people sex does not mean these things. Pornography has made it entertainment. Prostitution has made it tradeable, sexual abuse has made it a weapon wielded by the predator on unsuspecting victims. Many people make the mistake thinking that sex is the same as love. I observe too, that some women who practice sex outside the bond of marriage, feel used, have guilt feelings, self-doubt, regret, and fear sexually transmitted diseases and AIDS. A woman must think herself important. She must realize that she has control over her body and must decide for herself whom she wants to give her body to. This is her choice. Therefore, long before you face an actual sexual situation, you must have already made up your mind. I say making up your mind, because sex is actually an act of will. The ability to have sex is only one aspect of a person’s life although a very special aspect. Because we are made a complete person – body, soul and spirit – sex is not purely a physical activity. It involves our entire being during the process and long after it is over. It is a girl wanting to feel loved and wanting to feel safe. For a bride on her honeymoon, she feels she has surrendered herself to the man she loves. She feels good about herself, she feels loved and protected. To her, part of the beauty of the sexual experience is also the sense of exclusiveness and privateness, the secret between only the two. Who then is this man, who will qualify to enjoy your body in sex and whose body you will relish? For whom will you wait to give this gift to? He must be a very special person, whom you love and trust not only at the moment but long after. He is the one who thinks you are special enough to marry; who will promise to love you always; be with you during joy and pain; who will promise to have sex with no one else; who will father your children. Dear Ming, Do you know what is to be loved? You must know. I used to say to you, "Mummy loves you", and ask you, "do you know how much Mummy loves you?" You would raise your little hands in the air, and say, "so much." But as you grew older, you wouldn't reply, but say a hurried "yes, yes". It's a game you don't want to play anymore. The best picture of parent's love, is when a baby is learning to walk and the parent is in front cheering him on with arms outstretched, ready to catch him if he should fall, yet hoping he would succeed. But should he fall, the parent might let him, knowing that the experience is good for him, but still be there to pick him up. Another picture is the eagerness with which I want to come home to see you and your brother. "Ming", and you would answer "hi, Mum". I would sit in your room and just enjoy being near you, just watching you. Yet for all the closeness we felt in the early years, a mother's love is incomplete except by letting you go off on your own. I have long ago realised this, and it is a new experience for me, allowing you to find your own feet, to decide for yourself the path in life you want to follow, to succeed, to fail. I will be watching you from a little distance, hoping you will not fail. But I will be there, loving you. This is the way a parent loves. You don't say that you are in love, but you say you like him a lot, this young man you are going out with. Everyone in school is dating you say, so why can't I? 'Is it love, or just a lot of 'like'? It's wonderful to be in love. It's a good feeling. I saw it in the eyes of a girl waiting for her boyfriend. When he arrived, her face was radiant, her eyes shining and she headed straight for him, totally unaware that she had walked right through a barrier of potted plants. Is being in love and saying "I love you" to one another, real love? I don't think you would know whether there is real love between a man and a woman until year later. Love is something you know is there only after it is tested. So you like your friend a lot and want to be with him as much as possible, but how can you tell if he has the potential for a life-long love relationship. In other words, is he good husband material for you? But you say, "Oh, Mum, I am not going to marry him. We like each other but marrying him is another story altogether. That's like going to the moon. Besides, I am too young to think of getting married." I don't think it's too early to discuss the subject of marriage, when you are starting to really like a boy. When a girl starts to have feelings of love and attraction towards a boy, in her is awakening the sense of being a woman. Her body and mind are becoming aware of a latent dimension in her - her sexuality. She starts to think of boys in a romantic way. This new interest in boys is the way a young woman begins her search for a permanent life partner. So don't think I am silly to talk to you about who you should marry.
